Sometimes it’s nice to suspend disbelief on a Sunday evening. As in, my disbelief that I will be going to work tomorrow.

And, by the way, I cannot wait to see those muscles transform into Bilbo Baggins.

UPDATE: I was hoping that those 26 lbs of muscle that James McAvoy added were somehow a feat of CGI wonder. Not so.

This recipe for Sweet Chili Lime Tofu is one of the best things to come out of the kitchen in a long while. As soon as I saw it on Vegan YumYum I knew I had to make it and I think we’re both glad I did. I swapped out the collard greens for broccolini and the quinoa for pearl couscous. The effect was a little bit like this but the flavor of the marinade was like heaven.

I also had some baby artichokes laying around that I fried up as a bit of an appetizer. I think I’ll try this menu out again for an upcoming dinner party.

My favorite quickie dinner to throw together when Thom’s traveling is a box of Annie’s mac and cheese with some arugula from our garden thrown in.
