This recipe for Sweet Chili Lime Tofu is one of the best things to come out of the kitchen in a long while. As soon as I saw it on Vegan YumYum I knew I had to make it and I think we’re both glad I did. I swapped out the collard greens for broccolini and the quinoa for pearl couscous. The effect was a little bit like this but the flavor of the marinade was like heaven.
I also had some baby artichokes laying around that I fried up as a bit of an appetizer. I think I’ll try this menu out again for an upcoming dinner party.
